Easy Blueberry Muffins
These guys are so easy and so so yummy. I made mine mini-muffins since I don't have a full size muffin tin but you can make them either way!

Ingredients:
1/2 cup blueberries, fresh or frozen
1/2 cup milk of choice
1/2 cup applesauce
2 tsp lemon juice
1 1/2 cup flour of choice
1/4 cup oats (or sub for more flour)
1 tsp baking soda
2 tsp baking powder
1/2 cup sugar of choice
pinch of salt
Topping:
1/4 cup maple syrup or honey
1 tsp cinnamon
1 cup of flour of choice (I did this half oats!)
Preheat oven at 350F.
Mix topping together in a bowl and sit aside. Mix dry ingredients together in medium bowl. Mix wet ingredients together in large bowl. Incorporate dry ingredients into wet (you can do this in a blender to make it super easy! or with a hand mixer. I don't have those so I just did it by hand).
Fill your lined or greased muffin tin with batter and top with the crumble. Cook until crumble is golden, about 25 minutes. Enjoy!
