Easy Oatmeal Cookies

I'm moving next week and you know what's overtaking my pantry, oats. So many oats. So I threw together these everything but the kitchen sink cookies. They're super easy and super yummy.

Dry Ingredients:

1.5 cups rolled oats

3/4 cup flour of choice

1/2 tsp baking soda

1 tsp cinnamon

1/4 tsp salt

Wet Ingredients:

1 egg or flax egg (mix 1 tbsp ground flax and 3 tbsp warm water and let sit for 5 minutes)

1/4 cup melted coconut oil

3/4 cup sugar (I used coconut sugar, if using table sugar, use 1/2 cup brown sugar and 1/4 cup white sugar)

1 tbsp milk of choice

1 tsp vanilla extract

Optional: raisins, nuts, seeds, chocolate chips, etc!

Mix dry ingredients together in a large bowl. Mix wet ingredients in a medium bowl and pour over dry ingredients. Mix well, ensuring all the dry mixture is properly moist. Let the mixture chill for 30 minutes. Preheat oven to 350F. Roll the mixture into approximately tablespoon sized balls and flatten on a greased baking sheet. Bake 10-12 minutes and enjoy!
