Pumpkin chocolate chip muffins



These babies are my favorite! It's an adapted family recipe. It can be made vegan or gluten free easily if you have food preferences or medical necessities.


Dry ingredients:

  • 1.5 cups of flour of choice

  • 3/4 cup sugar of choice

  • 3/4 t. cinnamon

  • 1/2 T. baking soda

  • 1.4 t. nutmeg

  • 1/4 t. baking powder

Wet ingredients:

  • 8 oz pumpkin puree

  • 1/2 cup oil of choice

  • 1/4 cup applesauce or 1 egg

  • 1 t. vanilla extract

Optional:

  • Chocolate chips to taste

  • Nuts, dried fruit, seeds, etc!

Pre-heat oven to 350F. Mix dry ingredients in small bowl. Mix wet ingredients in medium bowl. Add dry ingredients to wet ingredients and stir well. Add in optional ingredients. Bake in a greased loaf pan for an hour or in a 12 muffin tin for 30 minutes. Enjoy!!
