Protein PB Granola

I’m not a huge fan of cereal. It’s always getting soggy so quick and an entire box doesn’t even fill me up. But you know what I do love…granola. It’s always so crunchy, it’s not overly sweet, it’s easy to make, and it pairs so great with fresh fruit. I whipped up a batch of this PB protein granola for my road trip. It can easily be made without protein powder but I decided to boost the nutrients to ensure I had enough easy sources of protein on the road. You can make so many variations of granola. Add your favorite seeds! Switch out the sweetener! Use cashew butter or sunbutter! From spices to flavored protein, I encourage you to get creative. There’s so many fun things you can cook up.

Ingredients
2 cups rolled oats
1/4 cup maple syrup
1/2 cup peanut butter
4 scoops of your favorite protein powder (optional; I used Vegan vanilla & greens)
2 Tablespoons coconut oil
1 Tablespoon chia seeds
1 Tablespoon flax seeds
1 teaspoon vanilla extract
1 cup almonds
Directions
Mix all of the dry ingredients together in a medium sized bowl
Add the peanut butter, coconut oil, and vanilla to a microwave save bowl and heat until melted (stirring every 30 seconds)
Mix until smooth before pouring over the dry mixture
If your mixture is still very dry or your oats are not fully coated, slowly add additional coconut oil and/or maple syrup until it’s moistened
Thoroughly mix before baking at 325F for 30 minutes or until golden brown on a parchment paper lined sheet (mix half way through)
Keep in an airtight Tupperware or Ziploc and enjoy as you please
